Chickpea Balls with Romesco Sauce


Well it's been a long time in between posts. I have such a backlog of recipes i need to blog. Bring on the holidays so i can get everything done!!!

This is what i had for dinner tonight and it was so delicious that i thought it needed blogging ASAP!

I made a few alterations - i did everything in the Thermomix which made it super simple and i baked the chickpea balls for 30 minutes at 180 degrees instead of fry.

The sauce is to die for!!! I'll definitely be making this sauce time and time again. The chickpea balls are good too - quite lemony so i might tone down the lemon next time but that is just a personal preference. I think i'll also make a double batch next time because both the balls and the sauce would freeze well.

Can't wait for leftovers for lunch!
